Ingredients
For the salad
4
cups
salad greens
(e.g. romaine lettuce, arugula, baby spinach, etc.)
¼
cup
fennel bulb,
thinly chopped
¼
cup
spring onion,
chopped
¼
cup
pomegranate seeds
4
dried figs,
chopped
Salt
For the balsamic vinaigrette
3
tbsp
olive oil,
extra virgin
2
tbsp
pomegranate balsamic vinegar
(or plain)
Freshly-ground pepper
Instructions
Place all the salad ingredients in a large bowl and toss to mix them.
In a small bowl mix together the vinaigrette ingredients and stir well.
Pour the vinaigrette over the mixed salad and toss gently to combine.
Serve fresh.
