Preheat the oven to 325°F / 160°C. Line a baking sheet with parchment paper.
In a large bowl mix together the oats, nuts, flaxseed, coconut, dried fruit and spices.
In a small bowl mix together vanilla, olive oil and honey.
Add the wet ingredients into the large bowl and stir with a wooden spoon.
Spread the mixture evenly on the baking sheet and bake until they get a golden color, for approximately 30 minutes.
Let the granola cool completely and store in airtight containers.
NOTES
Nuts: I use sliced almonds, chopped walnuts and chopped peanuts. You can also use chopped pistachios, hazelnuts or pecans.
Dried fruit: You can use raisins, dried cranberries or dried blueberries. In case you want to use bigger fruit like dried figs or apricots, you can chop them in smaller pieces before adding them to the mixture.
Spices: I use cinnamon, cloves and nutmeg. Ginger, allspice and any other spices that are usually used for sweets can also be chosen.
