Breakfast really is the most important meal of the day. Unfortunately though, for the average working adult, who leaves their home early in the morning, with a mind already overloaded with million things the moment they get out of bed, breakfast is also the most neglected meal of the day.

Granola is one of the easiest and more convenient ways to have breakfast. With minimum preparation needed, no wonder it is among the most popular store-bought products. But for a health-conscious consumer, eating such a highly processed food, usually loaded in sugar, salt and additives, may sound like a worse idea than skipping breakfast. That’s where homemade granola can make a difference. Loaded with the right nutrients and with all the energy we need in the morning, it can be the healthiest breakfast choice for busy mornings. A versatile recipe like the one below can add variety, as we can use different combinations of ingredients.

For this recipe, I use two kinds of oats, rolled and instant ones. Rolled oats are less processed, they have a better shape which they keep when cooked and they give the granola a much crunchier texture. Instant oats, on the other hand, can absorb more of the wet ingredients and they help them blend better.

Our homemade granola is rich in carbohydrates, a macronutrient that we mostly need in the morning, and also in healthy fats (olive oil & nuts) and omega-3 fatty acids (flaxseed). It is also a wholegrain product and it boosts our daily fiber intake. If you choose to eat it with milk or yogurt, you can also increase your protein and calcium intake.

Equipment

  • Large mixing bowl
  • Small mixing bowl
  • Baking sheet
  • Parchment paper

Ingredients
  

  • 2 cups rolled oats
  • 2 cups instant oats
  • 1 cup chopped mixed nuts (see notes below)
  • ½ cup broken flaxseed
  • ½ cup dried, shredded coconut, unsweetened
  • ½ cup dried fruit (see notes below)
  • 1 tbsp mixed ground spices (see notes below)
  • ¼ cup olive oil
  • tsp vanilla extract
  • ¼ cup honey

Instructions
 

  • Preheat the oven to 325°F / 160°C. Line a baking sheet with parchment paper.
  • In a large bowl mix together the oats, nuts, flaxseed, coconut, dried fruit and spices.

  • In a small bowl mix together vanilla, olive oil and honey.
  • Add the wet ingredients into the large bowl and stir with a wooden spoon.

  • Spread the mixture evenly on the baking sheet and bake until they get a golden color, for approximately 30 minutes.
  • Let the granola cool completely and store in airtight containers.

NOTES

  • Nuts: I use sliced almonds, chopped walnuts and chopped peanuts. You can also use chopped pistachios, hazelnuts or pecans.
  • Dried fruit: You can use raisins, dried cranberries or dried blueberries. In case you want to use bigger fruit like dried figs or apricots, you can chop them in smaller pieces before adding them to the mixture.
  • Spices: I use cinnamon, cloves and nutmeg. Ginger, allspice and any other spices that are usually used for sweets can also be chosen.
